Menus for warm weather: what works on the beach, a terrace, and an estate

The heat of Colombia's Caribbean coast calls for smart cooking. Discover the dishes, formats, and service techniques that keep an outdoor event fresh and elegant.

Cooking for an outdoor event on Colombia's Caribbean coast is an art that combines culinary technique with climate logistics. With temperatures above 30°C and unforgiving humidity, the menu cannot be the one you would serve at a wedding in a cool climate.

The golden rule: favor dishes served cold or that reach their best right at the moment of serving. Ceviches, tiraditos, carpaccios, salads with protein, and gazpachos are the best allies of a beach or terrace event. They not only hold up better in the heat, but guests appreciate them when the temperature climbs.

For the main course, live stations are the most elegant solution:

  • A seafood grill where everything is cooked in front of guests
  • A rice bar with dishes prepared to order
  • A carving station with cuts fresh from the oven

This ensures everything arrives hot on the plate, no matter how much sun there is outside.

At estates, where the setting is more rustic and immersive, shared tables with family-style platters work very well. Think platters of garlic prawns, green mango salads with shrimp, coconut rice served in natural coconuts, and tropical desserts that celebrate the region.

A common mistake is underestimating hydration. Good warm-weather catering includes:

  • Water stations infused with cucumber, basil, and lime available from arrival
  • Refreshing cocktails based on tropical fruit
  • Alcohol-free options that go beyond lulo juice

Our advice: if your event is outdoors on the coast, design the menu around the climate, not around what “looks pretty on Pinterest.” The best wedding food is the food your guests remember for its flavor, not the food they forgot because it was lukewarm.
